Eat Shitake
Portabellas have long become the king of mushrooms. They’ve been heralded as the steak of vegetables, but often unnoticed is the shitake; the prince. I made myself a toasted sandwich tonight, and decided to switch out my common choice of portabella with the shitake. The shitake provided a different consistency, a moister bite than the portabella. Also, I find the portabella to offer a subtle flavor. but the shitake can bring in a nice bold flavor without the need for any seasoning or sauces.
